
Clay County has hit the jackpot for viewing Monday’s solar eclipse. We are right smack-dab in the path of totality and that is something to celebrate. So I started thinking of foods that might be appropriate for an eclipse party: sunshine cake, sunflower seed bread, moon pies, sun chokes, sunny-side-up eggs, moonshine and eclipse cocktails, but the first thing that came to mind was blackout cake.
It was developed by the Ebinger Baking Company, which was established in 1898 in Brooklyn and grew to a chain of stores throughout the borough.
